This book was written just after the end of World War II when industrial catering was shifting from wartime arrangements to peacetime needs. It suggests how to improve an existing canteen or launch one for the first time. Many subjects are covered including outlay and running costs, kitchen planning, staff and menus. Many of the suggestions are now outdated and seem quaint by modern standards, but equally, much of the advice given is still relevant today.
